Engines gimbaling are currently in active development. Engine throttle is already in the game, controlled with the up and down arrow keys.

Sort of. Some people have had some luck using Whiskey, results pending on version. I have an M4 Pro mini myself, so I'm interested in trying it out some time. Either around here on the forums or on the Discord you should find some discussion around it though.
