We all love a dark theme, and it's probably the one I'd personally keep using - but the choice of a Light theme is an important accessibility tool, and it's not something easy to implement on the browser end (compared to a plethora of force-dark-mode extensions such as DarkReader).
Users with astigmatism can experience more issues when trying to read light-on-dark text. There's no one-size-fits all accessibility solution, so giving users the option - even if it's just Light/Dark - is the best for the most people. This blog post - Dark mode & accessibility myth - Stephanie Walter - has links to further reading on the topic as well, so you're not just taking my word for it. I understand making a new theme and adding it to the user's preferences isn't quick nor easy, but it should probably go on the to-do list eventually.
